The bright and fresh ingredients in this bowl are sure to brighten your day! For lunch recipes, I try to keep them simple and quick so that it is easy to throw together and head out of the door or get to your daily tasks. Eating healthy doesn’t have to take a long time or feel daunting. It also doesn’t have to be dull and boring! With some light cooking, this recipe can be thrown together while your getting ready in the morning. The dressing can be made in advance and stored in the fridge for a few days. Feel free to substitute any ingredients that fit your preferences or dietary needs!
Ingredients:
1/2 cup quinoa
1/2 cup shelled edamame
4 generous handfuls of arugula
1-2 cups of watermelon
1/2 cup of blueberries
1 carrot peeled and shredded
1 avocado diced
1 handful of sliced almonds
mint as desired
Instructions:
Cook quinoa and edamame according to the instructions on the package. Add all ingredients together in a bowl and enjoy! Serve with tahini dressing.
